Perfect Wines to Match with Hatch!

If you’re looking for a white wine to match with your hatch, chose one with lower acidity . A few that come to mind are the California white blends, some Rieslings, Alsace Pinot Blanc and Pinot Gris, or an Oregon Pinot Gris. A crisp Torrontes from Argentina would be a great match!
As for reds, the lighter, softer, juicier reds are the way to go. Rock Lobster Zinfandel would be agreat pairing. Beaujolais works well with hatch and a softer, fruit-driven Pinot Noir or Australian Shiraz are also good choices.

In double-boiler, melt 1 package of Central Market Organics Chocolate Truffles. Add 1/4 C heavy cream, and 2-3 chopped, Roasted Hatch chil peppers. Let steep over low heat for 15-20 minutes, remove peppers (strain), and pour over ice cream for a real treat!
