Cedric Littman, English Cheesemaker Coming to Southlake

He's an ambassador of cheese …

Central Market Southlake is excited to welcome master cheesemaker, Cedric Littman, from Ford Farm in Dorset England to our store on July 22nd. Ford Farm is on the Ashley Chase Estate on England’s south coast, near the town of Cheddar which gives the cheese its name. Today they make many varieties of cheese on the farm from their own milk and those of selected neighborhoods – following the traditions that have been abandoned in favor of high volume/low unit cost manufacturer which is used by most of the cheese maker operations.
 
Ford Farm is still in production today because of their desire to keep making cheese using traditional methods, working hard to make the cheeses by hand rather than abdicate production to machines. While other cheese makers have tried to drive costs out of the production but mechanizing the production, Ford Farm continues making the traditional product the traditional way. 
 
“Every time we dispatch a shipment of cheese to our customer we feel privileged to do so as someone outside the Bride Valley, where the farm is situated, is giving us a vote of confidence and showing us they care enough about their sustainable ethos and way of life to support it by appreciating our product. Having had a customer buy one piece of cheese the product needs to be an ambassador to convince the customer to come back for more.”
