We're first to market with Alaskan Halibut!
The first-of-seaon fresh Alaskan Halibut is here, and Central Market is the first to market! This catch of Halibut will be in short supply due to 60 foot ocean swells off the coast of Alaska, but Central Market managed to get 2,500 pounds and had it flown in yesterday, so it's fresh in the case this morning.
Alaskan Halibut is the world's premium whitefish. In the deep waters off the coast of Alaska, this species grows to an impressive size, with some halibut weighing well over 300 pounds. Alaska Halibut has earned its well-deserved reputation as the world's premium whitefish and is a natural for a variety of signature dishes and attractive plate presentations.

* Alaska Halibut's mild, slightly sweet flavor is a prime reason for its widespread popularity among chefs and home cooks.
* Known for its firm, flaky texture and delicate, succulent flavor.
* Halibut is a great fish for poaching or steaming, but can also be grilled or sautéed. If sautéing, make sure that the pieces of fish are dry on the surface. Apply oil or butter to the surface with salt and pepper. Make sure that the pan being used is hot and that you are using an oil that has a high smoke point or clarified butter. Sauté on each side for 3-4 minutes, or until fish begins to flake, and finish in a preheated oven until slightly pink on the inside. Make sure not to overcook, as Halibut will become tough.
