Barber's 1833 Vintage Cheddar - Aged Two Years

Written by Edouard D., Bakery, Deli & Cheese Buyer on Thursday, May 27 2010

Wonderful Cheddars are made in the Barber's Dairy. It's less than 5 miles from the town of Cheddar, whence this cheese was born.

These cheeses have a "PDO", which means they are protected under their origin.

All Barber Cheddars are made from milk in Somerset, Dorset, Devon and Cornwall in England.

The Vintage Cheddar is creamy, with a distinct bite and smooth finish, aged a minimum of twenty months.

The Barber family has been farming and making cheese at Maryland Farm in Ditcheat, Somerset since 1833. Today the Barber farms comprise 2500 acres of prime Somerset dairy land and are home to some 2,000 dairy cows.

They continue to use traditional ‘cheddaring’ techniques combined with a unique collection of traditional starter cultures for which they are sole guardians, to create a truly typical West Country Farmhouse Cheddar. Barbers Dairy is run by cousins Giles and Charlie Barber, the sixth generation of the Barber family.

You must try this cheddar with our Northern Spy Apple Pie.
