Irish Farmstead Cheeses at North Lamar

Darú from Cooleny Farm
The cheese department at the North Lamar store recently had the distinct privilege of hosting Irish cheese maker Breda Maher. Breda came from Cooleeney Farm in Co. Tipperary, Ireland to share some of her farmstead cheeses with us. Cooleeney Farm started producing cheese in 1986 and is a fourth generation family run operation. The Maher family makes their cheeses using milk from their own cows. The rich lands of Tipperary produce a variety of distinct flavors, which are beautifully showcased in all Cooleeney’s cheeses and especially in Darú.
Darú is a hard cow’s milk cheese made with vegetarian rennet that develops a natural rind as it matures. Aged in special storing rooms to absorb the subtleties of its environment, its gently crinkled exterior conceals a beautifully textured and well balanced inside. The earthy nose of the rind gives way to wonderfully nuanced floral and herbal aromas and upon tasting it, Darú is creamy on the palate with a long and even finish.
Irish farmstead cheeses are at the forefront of a culinary awakening that has been taking place in Ireland over the past few decades. With cheeses like Darú, it is easy to see why the enthusiasm generated by these cheese makers has spread far beyond the Emerald Isle.
