Creamy and Smooth ...
St. Felicien is so creamy and smooth, visitors to the North Lamar cheese shop who try it often ask, “Did you heat this up? How did you get it this way?” In fact, we don’t need to do anything with St. Felicien but unwrap it and watch it be scooped up by its adorers. A natural-mold rind cheese from the south of France, St. Felicien is interesting in texture so to excite any who behold it, but familiar enough in flavor to appeal to the unadventurous or those who are new to soft cheeses.
St. Felicien is made from pasteurized cow’s milk and is never pressed or cooked, which lends to the smooth texture it is known for. St. Felicien is contained in its own signature ceramic crock, the perfect presentation for this runny-smooth cheese. St. Felicien is earthy and pungent in flavor and would pair well with a juicy red wine and fresh fruit. This cheese is so versatile, it would do well on a cheese plate before a meal, or as an end to a meal as dessert. Come in to the cheese shop at North Lamar and seek out the small ceramic package with the larger-than-it-seems flavor inside!
