Varietal EVOO - a New Concept in Olive Oil and a CM Exclusive

The flavor profile of EVOO (Extra Virgin Olive Oil) depends upon the variety of olive as well as the region and altitude where the olives are cultivated. With this in mind, Daniele Salvagno, of the family-owned REDORO farm estate is introducing a new line of four varietal Extra Virgin Olive Oils, which will be offered exclusively at Central Market.

Olive Growers Since 1895
The REDORO farm estate is located in Gressana, just north of Verona, Italy and has been cultivating olives in keeping with tradition and a devotion to the soil that has been handed down from father to son. These valleys are covered in olive groves and vineyards and are served by two oil mills – one in Grezzana and one in Mezzane. This area is in the final stages of gaining approval to receive the appellation of origin for its production of DOC extra virgin olive oil.


Hand Picked
Olives are hand picked at just the right degree of ripeness and taken to the oil mills on the same day. To preserve their nutritional quality, the olives are cold-pressed using stone grinders and the entire production process is carefully monitored by specialized staff.


Daniele Salvagno
Born in Verona in 1970, Daniele continued in the family tradition and committed to continuously improving product quality by staging "tastings" every morning at the mill. Producer by producer, he grew production and today over 1000 producers send their best olives to Redoro mills.

This family-owned and operated company's philosophy is to produce quality EVOO that is 100% Italian, and the "i" series of oils reflect that goal. The "i" stands for integrale, which means full or complete. Each oil has it's own distinctive flavor profile.

i FRANTOIO - spicy, full-bodied, great on meats or for dipping
