What's the story on these new "I" Olive Oils?
There are 4 new exclusive extra virgin olive oils now on the shelves at Central Market. These are the "I" oils and the "I" stands for "Integrale. "I" which means "full or complete" and in this case unfiltered. Each oil is from a specific olive varietal and are each in a distinctly color coded label.The oils are all produced in the Verona region of Northern Italy.
Here's an easy way to decipher the color code. The Nostrano is in the white label and this olive oil has a delicate, fruity, fragrant taste with a light almond after-taste and slight peppery finish. This is the most versatile and flexible oil from the "i" series and can be used for any application from salads to soups to meat and fish.
The yellow label is the leccino olive oil. This oil has a very fragrant and fruity taste with a floral scent. It has a deep green color and is best used for cold dishes, such as vegetables or salads.
The Perlarol olive in the green label has a sweet and full-bodied aroma with a mature fruit and almond taste, with an intense green color. Best served with dishes such as grilled fish, vegetables, cheese or salads.
Lastly, the red label Frantoio has a sweet and full-bodied aroma with a mature fruit and almond taste, with an intense green color. Best served with dishes such as grilled fish, vegetables, cheese or salads.
Try them all and find your favorite application. I'd like to hear your selected uses for each. Life is too short for only one olive oil.

Are these CA or European Oils. I know CA oils are on the rise. The AAS degree candidates at the Culinary Institute LeNotre (Houston TX) recently visited an Olive oil farm on our trip to CA. Pretty impressive.

In this particular case these are all 100% Italian oils sourced from small growers in the Venetto region.
