2010 Beemster Graskaas “Just Arrived”

The Beemster has started to turn green because of spring!  

To celebrate this, Beemster Cheese has created a limited edition Spring Cheese known as Graskaas.  

These very rare wheels are made only from the first milk which is the creamiest of the year that the Beemster cows give after being released from the barns where they spend the winter.  Check out the fun video of the cows bustin' loose as they're let onto the thick spring grasses!

 

 

 

The lush spring grasses of the Beemster polder, 20 ft below sea-level, provide the smoothest and sweetest milk of the year.  It is this milk that becomes the celebrated Graskaas.  There is only enough milk from to produce about 2,000 wheels of Graskaas and about 1/4 of those have just arrived at Central Market and will be available for a limited time. This great table cheese can also be enjoyed cubed on top of a salad. It is also a great melting cheese.
