Caro Chocolates, SAID Antica and other favorite chocolate

Written by Edouard D., Bakery, Deli & Cheese Buyer on Thursday, February 11 2010

With all the hoop-la of Central Market's Chocolate Festival (February 12-14) you come to expect chocolate around every corner. But did you know that the Deli features chocolate all year long. Not only that, but we feature chocolate of all styles and from all around the world.

Some of my favorites are below.

Caro Chocolates (Spain):

Chocolates Caro are produced by three brothers in Aragon, Spain. There is a dark and a milk chocolate, the dark has 68% cocoa and the milk 40%. Both are made in 1kg bars, the flavor profile of the dark is earthy with notes of cinnamon and clove while the milk has unusual toffee and caramel flavors.

The beans are from a plantations on the Marfil coast (Spanish for Ivory Coast), one of the largest producers of cocoa in the world. The cocoa is collected by small family operated plantations, which grow and gather Forastero beans, clean and ferment them. Their grower/importer then gathers the beans in his warehouse in the port of San Pedro and follows all the European quality control

SAID Antica Fabbrica Del Cioccolato

SAID has been making exceptional chocolates in Rome since 1923. The artisanal production of this small company is truly a jewel. One taste and you see the difference.

-          Cioccolato Fondente 70%- Dark Chocolate 70%

-          Cioccolato Latte – Milk Chocolate

-          Cioccolato Fondante con Granella di Caffe - Dark Chocolate with Coffee Grains

-          Cioccolato Fondante con Canella - Dark Chocolate with Cinnamon
