Born and raised in the city of Manila, the capital of the Philippines, this humble pastry chef couldn’t have known what the future held in store for him.  Meet Dindo, the Pastry Chef and Expert Cake Decorator at Central Market Fort Worth. We'd like to introduce you to Dindo so that you can get to know our team a little better, and meet the talent behind those gorgeous wedding cakes you see at CM Fort Worth.  As a child, Dindo gravitated to the arts, and would carve anything he could get his hands on. This natural affinity for sculpture transferred into other parts of his life, and he eventually learned to combine it with his other passion, cooking.

Dindo began his training as a chef as a teenager in the Philippines, later moving to Iman, Jordan to further his education and experience. In the Middle East, as in Europe, a degree from a culinary institute is less important than one’s skill level – a chef must be able to work across many disciplines and master many talents – and Dindo has got that down! Specializing in French pastry, his skill grew exponentially as he traveled throughout the Middle East, and his reputation began to precede him. He was hired as the official Pastry Chef to the royal family, and personally decorated cakes for the prince and princess of Iman, Jordan.

Romance can blossom even in the desert, and Dindo met and married his sweetheart, a nurse. They made the decision to move to America after she was able to secure work through a hospital agency, and Fort Worth, Texas is where they landed. Dindo and his wife have two (absolutely adorable!) sons, ages just-turned-6 and almost-8, and when asked what the family likes to do for fun, he said “as long as we’re together, it doesn’t matter where we are – we’re having fun.”  In his time off, Dindo can be found in the kitchen or in the garden, his two favorite places.
