Prebiotic Breads Stimulates More Than Just Your Taste Buds

For the last few years we have seen a remarkable increase of the amount of product claiming Probiotic qualities, especially in the Yogurt category. The next wave will be in bakery product as Prebiotic. What does those terms mean:

Prebiotic is a food ingredient that selectively stimulates the growth and/or activity of bacteria in the colon and thus improves overall health.
Probiotic is a live microbial feed supplement which improves the intestinal microbial balance.
The bifidobacteria - good bacteria in our intestinal flora - perform functions that are essential for our health and for the activation of the immune system. Our digestive system is a remarkable and very sensitive system. We start to feel out of sorts the moment it becomes unbalanced. Our intestinal flora plays an important part in this process. The 'intestinal flora' is the collective name for the billions of bacteria in our digestive system. Most of these bacteria are very good to us but some may be harmful to our health. Scientific research shows that inulin (comes from chicory) selectively stimulates these healthy bacteria and thus builds up our natural resistance and promotes better calcium absorption. Unlike most other dietary fibers, they are selectively fermented by the intestinal flora. This means that they not only promote intestinal function, but that they also act as prebiotics.

Central Market Bakery now offers two prebiotic breads. Firstly, Whole Wheat Bread with Prebiotic Fibers, $3.99/ea, is a crusty whole wheat bread with a great flavor leaven with our natural starter. Secondly, Buttermilk Bread with Prebiotic Fibers, $3.99/ea, is a loaf bread shaped as a pull a part. Soft texture and light sour note from the fresh buttermilk. Great as a dinner roll option or can also be sliced for toasting
