Salumi Selections at Central Market Dallas

Written by Dallas CM on Thursday, November 06 2008

Salumi at the Dallas Central Market is an experience unto itself.  The dizzying array of choices includes selections from the world’s finest artisanal salumerias.  Many of our finest salumi selections come from American salumerias with roots and tradition deep in the heart of Italy.

The Creminelli family has handcrafted superb sausages in Italy's Piemonte region since 1906. A century later the founder's grandson Cristiano Creminelli brought the family's recipes and tradition of excellence to his own workshop in the United States where he produces the some of today’s finest hormone and chemical-free salumi.

San Francisco’s Columbus salami come from a family owned business that has spent three generations blending Old World craftsmanship, superior ingredients and an obsession with doing things right to create foods people love.  Started in 1917 in the North Beach, Columbus has evolved into a world-class salumeria. Old world traditional touches such as hand tying and hand turning are still alive at Columbus.

Renowned chef Paul Bertolli founded the Fra'Mani company in 2006.  The company’s mission is crafting salumi in the finest Italian pastoral traditions, using the highest-quality pork.  Through cooperation with family farmers who hand raise only the finest antibiotic and hormone-free animals, Fra’Mani has produced one of the finest old-world style product lines in America.

Salumeria Biellese has been making sausages and salamis since 1925, and although generations have passed, the company’s philosophy remains the same. Produce Old-World style products, with an emphasis on the highest quality.
