CARAMELIZED ONION PIZZA

2 lg. ( about 1 ½#) Onion, Sliced thin |
½ cup walnuts, toasted and coarsely chopped |

6 T. Extra Virgin Olive Oil, divided |
¼ cup chopped flat leaf parsley |

14-16 oz. Pizza Dough |
Salt and Pepper |

4oz. St. Pete’s Blue cheese, Crumbled |
3 Tablespoons Parmesan cheese |
· Heat ¼ cup olive oil in aa 12 inch heavy skillet over medium high heat until it shimmers, then cook onions with salt and pepper, covered, stirring occasionally, until golden about 15 minutes.
· Position rack in middle of oven and preheat to 425 degrees.
· Brush a teaspoon of olive oil on dough and spread the cooked onions on top.
· Sprinkle with walnuts on top of the onions top with a little parmesan cheese.
· Scatter the St. Pete’s Blue over the pizza and drizzle remaining oil.
· Season with pepper and sprinkle the parsley over the pizza.
· Bake for about 15 minutes, rotating the pizza once.
· Remove from oven and cut into wedges.
